Chicken Pinwheels

Use up any leftover meats or any part of the whole chicken with this chicken pinwheel recipe. Get you a Shady Hill whole chicken for this. If you already haveโ€ฆ ๐Ÿ‘‹ hey! The quality of the meat matters! I love making this for lunch and it uses the meat I have left over from other recipes well! ๐Ÿ˜‹ The amount of meat you use will determine how many people it will feed.

Preparing the meat:

If your chicken is frozen, then it will need 2-3 days to thaw. The time depends on the weight and your fridge. Avoid using the microwave to thaw meat.

  1. Get your chicken out of the package. Here is a quick video on how we do this and avoid the liquid purge from leaking on the counter.

  2. Watch this video on how to cut up a whole chicken to see how we cut our chicken breasts. We recommend cutting the meat off after roasting for this recipe.

Ingredients

  1. Chicken Breasts- use any part as long as it is off the bone

  2. Tortillas (x8)

  3. Cream Cheese

  4. Mozzarella or Parmesan Cheese

  5. Lettuce or Spinach

  6. Dill

  7. Salt

  8. Pepper

Cooking Instructions:

The Chicken:

  1. Preheat the oven to 400 degrees F

  2. Roast the whole chicken for 50 minutes or until the internal temperature reaches 165 degrees F. Check the internal temperature at 30 minutes.

  3. Cut chicken breasts or any other part off the bone.

  4. Use a stand mixer or two forks to shred the chicken, mix in the salt and pepper, then set aside.

Preparing the pinwheel:

  1. Spread cream cheese on a tortilla. You will need more than you think so spread it on thick! Only do this one at a time to ensure you will have enough chicken and seasonings as desired for each pinwheel.

  2. Add fresh dill, lettuce, shredded cheese, chicken, and any other veggies.

  3. Roll up the tortilla tightly.

  4. Use a knife to cut the tortilla into 1โ€ pieces to create the pinwheels.

Notes:

  • You can add in any seasonings and veggies you desire

  • How full you stuff these will determine how many you will make.

  • Donโ€™t feel like shredding meat? Cut it into small cubes instead.
