Ground Chicken Tacos

The haters will say these are lettuce wraps. Even farmer, Chris, who doesn’t love veggies and loves authentic Mexican food says this is a winner. And man oh man is this light on your tummy yet so satisfying.
While you’re fueling your body with a health conscious meal, make sure you’re using Shady Hill pasture-raised, nonGMO chicken. Not only does it make a difference for you, but it is a lot of support that will keep us farming this way for our animals, plants, and the land.
Ingredients:
Shady Hill Whole Chicken (2 chicken breast)
1 onion diced
Lettuce
Diced Tomatoes
Lime Juice
Shredded Cheddar Cheese
Salsa Verde
Greek Yogurt or Sour Cream
Taco Seasoning Ingredients:
2 Tbsp chili powder
1 Tbsp ground cumin
1 tsp pepper
2 tsp sea salt
1 tsp onion powder
1/2 garlic powder
1/2 tsp dired oregano
How to Cook
Double grind 2 Shady Hill chicken breast
Heat oil in a cast iron skillet over med. heat. Add onion, then remove once translucent
Stir in taco seasoning. Cook until chicken is fully cooked 165 degrees
While chicken cooks, dice tomatoes, then add in a bowl with desired amount of lime juice.
Peel lettuce leaves large enough to wrap your taco meat in. These are our “tortillas”.
Assemble your taco with chicken, cheese, tomatoes, greek yogurt, salsa verde, and anything else you desire!
Notes
We use a grinder attachment on our KitchenAid to grind our meat. Double grind means grinding it a second time after you initially ground the meat.
Don’t have a grinder? Chop the chicken into 1” pieces instead
We use Greek Yogurt instead of sour cream. Your pick!
